Vegan and vegetarian entrées, soups and side dishes are served at every dining facility. Crown Commons has a vegan station, huge fresh salad bar and meatless pizza and sandwich selections. UNC Charlotte's executive chef, Roger Lademann, says that in other dining locations, "All you need to do is ask!" For example, Mamma Leone's will make pizza with just sauce, vegetables and a little of Mamma's 'herb blessing.' Salsarita's has both black and refried beans for protein; add seasoned rice and fresh tomato salsas to create a delicious meat-free burrito. Sandwich stations such as Sub Generation in Cone Center and Mondo Sub in Prospector always have humus spread. And Use Your Noodle has terrific vegetarian sushi (which can also be made-to-order) and noodle bowls with fresh vegetables.
Preferences of vegetarians and vegans are considered as much as possible in preparation of food, too. Chef Roger explains that the
grills are thoroughly cleaned, then heated to 400º and that, "grilled vegetables are made first so as not to make contact with meat." Veggie burgers are cooked on a griddle plate placed on top of the grill; although the heat source is shared, no meat touches the veggie patty. Most campus kitchens have separate fryers for non-meat items but there are some locations where space or equipment limitations prohibit that.
